Added to The Property in 2021, the pirate-themed distillery is tucked into the woods at the edge of campus, accessible by a walking trail that makes the journey feel like an adventure before you even arrive. Step inside and you're on a pirate ship: dark wood, nautical rigging, treasure maps, and the kind of atmosphere that makes spirits taste better just by existing in it. Scallywag earns its craft credentials too — spirits go through a 4-5 times distillation process, carbon filtration, and reverse osmosis, with local ingredients sourced whenever possible. The result is a lineup of handcrafted spirits that are smooth, complex, and worth finding. Walk the plank. You won't regret it.
