The story of Knockin Noggin starts with an apple — and a bit of gravity. Themed around Isaac Newton's famous moment of discovery under the apple tree, Knockin Noggin is Nova's hard cidery, built on the idea that the best things in life fall right into place when you're paying attention. Walt launched the cidery in 2014 in the historic Volant Mill before outgrowing it and expanding into the Meeting House next door. The ciders took off — eventually reaching distribution across western Pennsylvania — and a relocated version of Knockin Noggin found its home at The Property in Pulaski, right alongside the winery, brewery, and distillery. The Medieval-themed tasting room is one of the most visually striking on the property. Expect ten-plus rotating seasonal ciders: from the sweet Strawberry and Raspberry to the crisp, semi-dry Inertia and Velocity. Pair with a rice bowl and let something good knock you sideways.
